
Polpette di Melanzane & Ricotta al Sugo

Roasted aubergine flesh is mixed with ricotta, Parmigiano, herbs and breadcrumbs to create tender vegetarian polpette. Lightly browned, then finished in a delicate tomato sugo until they become soft, flavourful and almost creamy inside. A perfect vegetarian mirror to the meat version.
